Maila Ta Fan Chesa!

BY JANET SHMULL — The Micronesia Chefs Association (MCA) held its third annual Maila Ta Fan Chesa (Join us for Pupus!) on May 27, 2014. The fundraising event provides tuition assistance for students enrolled in the Culinary Program at Guam Community College. This year local farmers were given the opportunity to showcase their produce and collaborate with an MCA member chef to feature a crop in three forms: a beverage, an appetizer with wine pairing, and a dessert.

The Outrigger Guam Resort’s Executive Sous Chef Simplicio “JR” Taga took on the challenge with pineapples, infusing the bold sweet exotic flavors into a pina colada, a savory smoked Cuban pork seared in pineapple salsa paired with rose wine, and roasted pineapples with honey and pistachio nuts.

With his participation and creativity, Chef “JR” exemplified in many ways our value of Onra (Honor)… We uphold the honor of our name by taking pride in who we are, what we do, and how we do it.
